Winning all the races can earn you stars depending on how hard you have tried at all the races and cups.
Try and get around 3 stars for all and when people are playing against you online they will think that you are a good player.

It basically just gives you a few stars above your name while playing online and against your friends

Completing all the races will unlock more characters, tracks and carts, and if you get stars for all cups it will show a star next to your name when you play multiplayer.
