Um, you're halfway there. Pastry and breadmaking is most importantly a matter of keeping ingredients in balance so that the finished product does what you want it to. Like if I wanted to make a chocolate sponge cake from a vanilla sponge recipe I would replace ten percent of the flour with cocoa (this being a standard replacement), but I would then have to increase the egg because cocoa is more hygroscopic than flour. I would probably also cut back on the butter so that the crumb would not be too closed.

But I digress.
